A Regular Dinner Staple

I think we all have those foods or recipes that we use on a regular basis.
For me it's potatoes, red or white are my favourite and the most versatile for my needs.
Since Easter is just around the corner I thought I would share one of my go to dinner staples.
It also just happens to be good on touchy tummies as it's easy to digest and it's an anti-inflammatory food.
Potatoes on their own are also fat free, and they contain lots of good suff like Fiber, Potassium, Vitamin C and Folate. They can sometimes get a bad rap because of the way they can be eaten....yes those fast food salty and some what greasy fries may taste fabulous but they are sure not good for us.
Thankfully we can bake instead of fry, and when you use healthy ingredients you can enjoy them without all the guilt.
Sour Cream Mashed Potatoes

Red or White Potatoes
Sour Cream (I like the 5% the best but any type will work just as well)
Onion & Garlic Powder
Your cheese of choice such as Havarti, Cheddar, or Mozarrella.

Wash, peal, cut and boil potatoes until they are nice and soft.  Drain them well and then add Sour Cream, Onion & Garlic powder to taste.  Mash with a fork, potato masher or electric mixer until you have it as chunky or as smooth as you like.  Serve with shredded or thinly sliced cheese on top and enjoy.
