Allergy Friendly Pancakes And A Little Easter Inspiration
As I was searching through Pinterest for some Easter inspiration I spotted a great idea to make bunny pancakes.
They used bananas for the ears and the pancake as the main body. Cream cheese and blueberries were used for the eyes (but you could cut a couple of slices of the banana for the eyes). A sliced strawberry was used (or maybe even a raspberry) for the nose and thin slices of cheese for the whiskers. Then chocolate chips (in a smile of course) for the mouth. But blueberries or cream cheese would be nice for this too.

If you're interested in making your own version of bunny pancakes or even just regular pancakes here is a simple and allergy friendly recipe for you.
Gluten, Egg And Sugar Free Pancakes
3 cups Cloud 9 Flour (or other Gluten Free Flour Replacement)
2 Tbsp + 1 tsp Baking Powder
2 3/4 cup milk ( I use 1% milk)
1/2 cup unsweetened applesauce
just under 1/3 cup, melted butter or margarine
Sift flour and mix in the baking powder.
Add milk and melted butter, mix well.
This batter is thick so you may need to spread or flatten the pancake a bit in the pan.
Cook in a non-stick pan, med-high heat until lightly browned and done on each side.
This recipe makes anywhere from 10-14 pancakes depending on the size you make them.
These pancakes freeze really well. I store them in a ziplock bag with waxed paper or parchment paper between each to keep them from sticking together.
Substitutions: If you want to use eggs instead of the applesauce increase the milk by 1/4 cup and add 2 eggs.
