Yummy Baked Peaches (And Other Fruits)

 

Going into the oven.

Sometimes during the winter months fresh affordable fruit can be hard to come by. I know I can become a bit board with the same old canned and frozen fruit options. 
One of my favourite fruit recipes is quick and easy to put together. Actually it takes less than five minutes to mix together and and put into an oven.

I regularly buy canned sugar free peaches, they come in large canning jars (720ml) from Costco and this jar is enough for about two servings.

The ingredients:

1 Large jar of sugar free peaches, reserve the liquid.

A small amount of gluten free tapioca to sprinkle on the bottom of the dish.

Cinnamon

In an oven safe dish sprinkle a small amount of tapioca on the bottom of the dish (about a heaping tablespoon or so.) Pour the peach slices and a small amount of liquid over the tapioca and mix.  Add the remaining liquid or a portion of the remaining liquid depends on the size of the dish. If you add to much it might boil over.  I finish by sprinkling a little cinnamon over the top to bring out the flavour and sweetness in the fruit.

Place the dish uncovered in the oven at 375 for about 1 hour and 10 minutes or until peaches are nice and soft. I usually mix the peaches up at least twice so the top doesn't over cook. Depending on the size of the peach slices it takes me anywhere from 1 hour and 10 minutes to 1 hour and 25 minutes to cook.

This dish can be served hot or cold.  But I often have it hot with homemade frozen strawberry yogurt.

 I've also added frozen blueberries, strawberries, or mango to the canned peaches.  No need to thaw them just mix them in with the peaches. Although it often helps to cut the peaches into smaller pieces to cut back on cooking time it's not necessary. When you do add additional fruit, you will also need to increase the amount of tapioca. 

If your not a fan of tapioca or don't have any on hand you can always substitute with cornstarch. If you don't want to use either option you can go without, but just note it will just be much more liquidly.
