Allergy Free Valentine's Day ideas

With Valentines day fast approaching those of us with certain allergies can feel a bit left out.  Especially if you're like me and enjoy chocolate.
Here are two of my sugar free chocolate recipes (of course you could also use any substitute you like for the brown rice syrup).

Easy Homemade Chocolate

Melt unsweetened baking chocolate (200g bar) in a double boiler, then add brown rice syrup to taste (2-3 heeping Tbsp) as well as 1tsp of sugar free vanilla.
Add whatever nuts and dried unsweetened berries you like.  After mixing everything together poor onto a cookie sheet lined with wax paper.
Let cool in the fridge.  Once cold, break it into pieces and place in a sealed container in the fridge.


Chocolate Nut Butter Bites

Mix brown puffed rice with nut butter.  I find if I warm the nut butter up slightly in the microwave it's easier to mix in the rice.  Mix enough of each so that it sticks well together.
Let it sit in the fridge until cold.  Using your hands form the mixture into small balls and place them on a cookie sheet lined with waxpaper and place it back in the fridge.

Using a double boiler melt some unsweetened baking chocolate, then add brown rice syrup to taste.  Mix well.
Using a spoon dip the balls into the chocolate and place back on the wax paper.
Let cool in the fridge.  Once cold you can layer them with wax paper in a sealed container.

Note:  The only ingredients I actually measure are for the baking chocolate (200g), the 2-3 Tbsp of brown rice syrup, and 1 tsp of sugar free vanilla.  Everything else always varies depending on what I have on hand and how much I want to make.
