My Date Nut Bar Recipe
I've been enjoying these nut bars that I get from the grocery store for a number of years now but they can be a bit pricey to buy all the time. They only contain 2-3 ingredients so I thought I would try making my own. I've been experimenting to see what combination I like the best and so far I think I have discovered my favourite. (Ok, yes I did add cocoa powder to my recipe, a girl has to have a little chocolate in her life right?)
They keep really well in the freezer and they cost less to make than to buy and I can change them up a bit when ever I like.
Date Nut Bars
1 package (500g/18oz) pitted dates (I use Sulfate free)
about 4 cups of walnuts, not chopped
4 heaping Tbsp of Cashew or Almond butter
2 heaping Tbsp of Cocoa powder
2-3 Tbsp of water
In a food processor process a small amounts of dates and nuts at a time. My machine works better when I add nuts to the dates early on so it doesn't have to work quiet so hard .
Once all the dates and nuts are well processed add the cocoa powder and nut butter.
Process until it all begins to stick together and to the sides of the machine.
I pour this all into a big bowl and add 2 Tbsp of water mixing it really well with a spatula.
If it really sticks together well at this point you won't need to add the 3rd Tbsp. If it's not go ahead and add the extra water. (I test it by grabbing a small amount in my hand and squishing it into a ball to see how well it forms and sticks together.)
Pour this mixture into a parchment or wax paper lined pan. I was using a 8x8 pan but found it to be a little to small and the bars a bit to thick so I will use a bigger pan next time.
Press down firmly and evenly all over, you want it to be really pressed in there.
Place in the fridge for at least 30 minutes before cutting into squares.
Take it out of the fridge and lift it out of the pan onto a cutting board and cut into squares.
I put a small amount in the fridge in an airtight container and the rest goes into zip lock bags and I stack them up in my freezer.
It would be super easy to switch out the walnuts for any other type of nut. You can also substitute the cashew or almond butter for any kind of nut butter you like. My personal favourite combination so far is the walnuts with cashew butter.
